'Serene Cuisine' Menu 3/7/15

Welcome Back To My Kitchen

This week's menu in the 'serene cuisine' kitchen is bound to be a hit as I bring you some of my most popular past recipes for delivery this Friday.

Brown Lentil Hotpot is on the menu again this week, chosen for its winter warming appeal with a piece of wholemeal flat bread as an accompaniment if you should choose to order it.
Lentils are extremely high in protein, a great source of fibre and are a fantastic introduction to the world of legumes.

This week's dessert is by far the most popular one I have had on the menu!
My Apple Shortcake is a rich, yet light, apple filled dessert which is finished off with a sweet cinnamon glaze and filled with fresh locally grown apple pieces.

'Serene Cuisine' Menu 26/6/15

Welcome Back To My Kitchen

Could it get any colder? Today's maximum temperature only just reached the double digits and I fear we may have a repeat of this for the next few days as Winter hits us hard here in the lower extremities of this beautiful country of ours.

Will I sound conceited if I confess to the fact that I love my own cooking? I hope not, but it's true!
I love cooking. I also love shopping for whatever ingredients I don't grow in my own garden and I love creating recipes around what I have grown, so as to maximise the organic component of the dish.

In The Test Kitchen

Today as I was driven inside by the plummeting temperatures, rain, and howling, icy winds, I spent some time creating a 'meatless' meatball using tofu and walnuts and although I was excited at the prospect of trying them, they totally superseded my expectations as far as flavour and texture were concerned.
I may or may not have eaten more than my share!
I hope to share this dish with you soon in an upcoming Friday menu.

Soup Or Stew?

This week on the 'serene cuisine' menu, I am offering a thick and hearty soup that will be so thick, you will wonder if it isn't, in fact, a stew.
I love nothing more in this cold and wintery weather than a chunky veggie soup full of flavour and heartiness and something bread like as a dipper to soak up every last drop of goodness.
As the dipper, I will have my Tomato and Rosemary Scones on the menu again.

Just Like Mum Used To Make

I have a confession to make. I have a soft spot for sweets. There, I said it!
This week I am making my all time favourite dessert for you all, Golden Syrup Dumplings. Yummo!!
You just can't beat those delicious balls of dough simmered in a golden sugary syrup, topped with dairy-free ice cream.
Ok, Ok.....That's it.
I have to stop now otherwise I'm going to have to cook them for my tea tonight.

Living Life With A Peaceful Heart

A Life Of Abundance

Living my life as an ethical vegan isn't a difficult decision for me and I never see it as living a life of lack or sacrifice, in fact, it's quite the contrary.

Since making the decision to go vegan, I have gained so much, not least of all, good health and vitality, but I also live with a peaceful heart with the knowledge that no animal is harmed or made to suffer through any of my lifestyle choices.

I make a conscious point of never preaching about the benefits of a plant-based lifestyle to anyone, but I am always more than happy to share what I have learned throughout my journey.

As the popularity of just frank and my 'serene cuisine' grows, so too has people's curiosity in how to best implement the changes necessary for removing animal products from their lives, and replacing them with more ethical and life-enhancing choices.

It is because of this curiosity that I will be writing more about some of these topics in an attempt to answer some of the most-asked questions.

Questions Anyone?

Please feel free to contact me with any that you may like answered and I will do my very best to help you.

*I would like to point out that I never have, nor will I ever profess to be an expert on this topic.
My opinions are not 'medically based,' (although I have always been closely monitored medically by my very supportive and encouraging GP) but I can speak from my own personal experience having lived through many years of health challenges and the steps I took to literally eat my way back to health by following a whole-food, plant based lifestyle.

Thank You

Thank you to those of you who have supported the just frank journey thus far in whatever way that is, and there have been many, by so many.

I look forward to your continued support and to the joy I receive from my interactions with each and every one of you.

Love and light,
Leah. <3

'Serene Cuisine' Menu 19/6/15

Hello From The Kitchen

One of my favourite places to visit whilst in Adelaide is the Central Market in the middle of the city, where you can spend countless hours soaking up not only the culture, but the myriad of aromas that waft and meld as they make their way out of the busy eateries in the area.
Coffee, international cuisine and fresh fruit and veggies are all on offer most days of the week, as thousands of locals flock in to gather their weekly supplies and grab a bite to eat and tourists wander the alleyways experiencing the delights that each stall and shop owner has on offer.

Delightfully 'sweet' Sweet Potato

Having visited the market this past weekend, I was totally in awe (as usual) at the array of fresh fruit and veggies on offer and among other things, I purchased a large quantity of beautiful sweet potatoes for this week's Creamy Sweet Potato and Leek Soup. Click on the link above to find out more about the huge nutritional benefits that including sweet potatoes in your diet can provide.
Served with my own home made Herb and Garlic bread, this soup is a real winter belly warmer and is packed full of nutrients.

Pancakes Anyone?

This week sees the return of the delicious Mini Banana Pancake Stack which will be served with a Mixed Berry Syrup, but if you prefer, I can provide you with Maple Syrup as the topping instead.
Please leave a note in the special instructions box on the order form if this is your preference.

Veggie Burgers and Soups

Many of you have already experienced either the 'just frank' Veggie Burgers or Soups which are regularly available for order either on the Friday order form, or by contacting me directly.
Burgers and Veggie Soups can be designed to suit your taste or dietary requirements with many of my customers taking advantage of this offer. Both soups and burgers
are suitable for freezing as they are always cooked fresh just prior to delivery.
Please contact me for more info.

'Serene Cuisine' Menu 12/6/15

Hello From My Kitchen

It would clearly be stating the obvious for me to say that the aim of my business was to provide wholesome, nutritious meals to folks who are looking for a whole food, plant-based option, and of course, this is certainly my mission.

An absolute bonus though of providing healthy nutrition to you which is personally delivered, is the relational aspect of the exchange.

Every Friday (and very recently, Wednesday's as well) I have the good fortune to interact with some beautiful people, some of whom I've known for many years, while others I have come to know only recently through my business, but all of you add such joy to my day through our exchanges of friendly banter, and of course, the occasional hug.

For this, I thank you....

This Week's Menu

A few weeks ago, after a chat with a regular customer and long time friend, I was asked if I was ever going to repeat some of the dishes that I had presented in the past, something I was mindful not to do so as to provide you all with plenty of variety.
Apparently there are favourites, passionately so, and with this in mind,  I will be making my Roast Pumpkin and Vegetable Couscous this week, which was one of the very first meals on the menu several months ago.
Beautiful chunks of butternut pumpkin are tossed in olive oil and garlic and roasted in the oven before
being blended with a selection of other veggies and couscous.

Dessert

Living a vegan lifestyle doesn't mean being deprived of anything, in fact so much is gained from living cruelty-free, not least of which is improved health and wellbeing.
'Veganising' recipes is a way of life for me with the chocolate muffin that I am offering on the menu this week being one that I am especially proud of.
Rich and 'chocolatey,' and low in saturated fat, this glazed muffin will satisfy the chocolate craving in even the most earnest of chocolate lovers.

Zesty Lemon Bliss Balls

After a brief absence from the Serene Cuisine menu, the ever popular Zesty Lemon Bliss Balls will make a return this week. In packs of 4, they are chocka block full of dried fruit and nuts with just enough lemon zest to pack a punch.

'Serene Cuisine' Menu 5/6/15

Hello From My Kitchen

For those of you who participated in Meatless Monday, I hope you enjoyed it. I will endeavour to post more recipes prior to next Monday for those of you keen to take the opportunity to go 'meat free' again.

On this week's Friday menu, I'm looking forward to offering some more hearty and nutritious winter fare, and with a huge list of Friday regulars now,  I'm thoroughly enjoying seeing you all and getting to know you on a more personal level.

Thank you all for your ongoing support.

A Taste Of India

Chickpeas, for both vegans and vegetarians, are a valuable source of protein as well as a host of other important nutrients and they lend themselves so well to a variety of menu items, both sweet and savoury.

This Friday I will be serving up a belly warming and tasty favourite of mine, Curried Chickpeas served over brown rice.

To accompany this if you so desire, I am offering a piece of wholemeal flatbread, basted in a garlic and sweet paprika infused olive oil blend, sprinkled with oregano and pink Himalayan sea salt, and then baked in the oven until it is just crispy enough to be the perfect curry dipper.

Dessert will be a deliciously moist slice of Apple Shortcake with a cinnamon glaze that adds just enough sweetness to finish off the perfect meal.

'DIY' Meatless Monday

Hello From The Kitchen

Good morning from the 'just frank' kitchen as we enter a new week.
Due to my time being spent on the planning of the 5 Day Meal Plan over the weekend, I won't be cooking for Meatless Monday today, but instead, I am bringing you a simple, delicious and nutrient dense Chickpea Burger recipe to make and share with your whole family.
Easy to prepare, this recipe makes 4 large burger patties that can be served either in a roll with salad or plated up with your favourite hot veggies or salad. They are delicious with mashed potato, green veggies and hot gravy. Yum!!

Meatless Monday

Meatless Monday is the perfect opportunity to introduce a meat-free day to your week and hopefully set up a more regular, new way of eating that is both delicious and great for the wellbeing of your entire family.

Give this recipe a try.
It's so easy to prepare that the kids can get involved as well.
For added colour and nutrient value, you can also add a handful of grated carrot or zucchini if you have them on hand.

Chickpea Burgers

1 can chickpeas, rinsed and drained
1/2 cup cooked brown rice
1/4 cup chopped fresh parsley
1/4 cup diced red onion
2 tablespoons peanut butter
1 tablespoon flour
1 teaspoon ground cumin
1/4 teaspoon salt
1 teaspoon olive oil

Method

Combine 1/2 cup of the chickpeas with the rice in a large bowl. Mash with a potato masher or fork until combined, but still chunky.
Combine the remaining chickpeas with the parsley, onion, peanut butter, flour, cumin and salt in a food processor. Pulse a few times until the mixture is mostly smooth, with a few chunks remaining. Transfer the mixture to the bowl with the chickpea-rice mixture and stir together with a fork, mashing lightly, until thoroughly combined.
Shape the chickpea mixture into 4 patties.
Heat the olive oil in a large frying pan over medium heat. Add the burgers to the pan and cook for about 4 minutes, flip and cook about 3 minutes more, or until cooked to preference. Enjoy!
