Good morning from the 'just frank' kitchen as we enter a new week. 
Due to my time being spent on the planning of the 5 Day Meal Plan over the weekend, I won't be cooking for Meatless Monday today, but instead, I am bringing you a simple, delicious and nutrient dense Chickpea Burger recipe to make and share with your whole family.
Easy to prepare, this recipe makes 4 large burger patties that can be served either in a roll with salad or plated up with your favourite hot veggies or salad. They are delicious with mashed potato, green veggies and hot gravy. Yum!!


Meatless Monday 


Meatless Monday is the perfect opportunity to introduce a meat-free day to your week and hopefully set up a more regular, new way of eating that is both delicious and great for the wellbeing of your entire family.

Give this recipe a try. 
It's so easy to prepare that the kids can get involved as well. 
For added colour and nutrient value, you can also add a handful of grated carrot or zucchini if you have them on hand. 

Chickpea Burgers


1 can chickpeas, rinsed and drained
1/2 cup cooked brown rice
1/4 cup chopped fresh parsley
1/4 cup diced red onion
2 tablespoons peanut butter
1 tablespoon flour
1 teaspoon ground cumin
1/4 teaspoon salt
1 teaspoon olive oil


Method


Combine 1/2 cup of the chickpeas with the rice in a large bowl. Mash with a potato masher or fork until combined, but still chunky.
Combine the remaining chickpeas with the parsley, onion, peanut butter, flour, cumin and salt in a food processor. Pulse a few times until the mixture is mostly smooth, with a few chunks remaining. Transfer the mixture to the bowl with the chickpea-rice mixture and stir together with a fork, mashing lightly, until thoroughly combined.
Shape the chickpea mixture into 4 patties.
Heat the olive oil in a large frying pan over medium heat. Add the burgers to the pan and cook for about 4 minutes, flip and cook about 3 minutes more, or until cooked to preference. Enjoy!
