With a hint of Winter in our midst this week, I am taking what may be the last opportunity there may be this season to introduce a light and nutritious couscous salad dish to you as this week's Friday whole food plant based meal.This delightful dish consists of a combination of beautiful fresh veggies including oven- roasted pumpkin, peas, beans, sweet corn, organic cherry tomatoes straight from the garden and fresh herbs tossed gently through a serving of light and fluffy couscous. This is accompanied by an individual serving of tangy honey and mustard dressing and two mini chickpea patties.
This week's 'sweet' item is a chunky and wholesomely nutritious slice of Date, Carrot and Walnut Loaf, perfect for a mid-afternoon snack when that 3pm energy slump arrives.

As my first 'gluten free' option, (see previous blog post on my shared facility guidelines) I am also offering some mini 'bliss balls' which are packed full of fruits, nuts, seeds and a dash of coconut....nothing else.Menu
